FAMILY: Anacardiacee

ORIGIN: Brazil

APPEARANCE: looks like red pepper berries, with shells 

TASTE:  aromatic and sweet, more than hot

HEALING POWERS: has antiseptic and disinfectant properties, helps with bronchitis, rheumatism and urinary tract infections

PART OF PLANT: fruit

PROCESSING METHOD: when ripe, clusters of pink pepper are harvested and dried. When dried, the shells may crack


Fun fact

  • grows in clusters and is actually a fruit, not pepper
  • pink pepper is a common ingredient in Chilean wines

Usage

COOKERY: 

  • as a seasoning for various fish dishes, risotto, meat, vinegar and wine, as well as dessert decoration
  • as a mixture with black and green pepper

CATERING/HOSPITALITY: 

  • decoration in beverages that are mixed with tonic and/or soda, such as gin & tonic
  • pairs well with herbs like mint and rosemary, but also with spices like ginger

  • dark, dry place at room temperature
  • shelf life: 24 months
